Why don't water resistance ratings mean what the number suggests?
Water resistance ratings are tested under controlled laboratory conditions with the watch stationary. Actual movement through water, the way your wrist moves when swimming or diving, creates additional pressure beyond what a static depth test measures, and temperature changes, like jumping into cold water, can also affect gasket seals temporarily. That's why the practical safe-use guidance sits well below the literal number on the dial.
What does each rating actually let you do?
A rating of 30 meters, sometimes marked 3 ATM, means splash resistance only, safe for rain or hand-washing but not swimming. A rating of 50 meters, or 5 ATM, extends to light swimming but not diving or serious water sports. 100 meters, or 10 ATM, covers recreational swimming and snorkeling comfortably.
200 meters and above is where genuine diving becomes safe, and this is the threshold most true dive watches are built to meet or exceed. References rated to 300 meters or beyond are built for serious recreational diving, and specialty pieces rated well past that, into the thousands of meters, are built for technical or professional diving far beyond what almost any owner will actually attempt.

What does ATM actually mean?
ATM stands for atmospheres, a pressure measurement, and it's roughly but not exactly equivalent to meters of depth in these ratings. 1 ATM equals roughly 10 meters in this context, though the actual testing standards behind the numbers vary slightly by brand and certification body. Treat the meter rating as the more intuitive number to work from day to day.

Does a higher rating mean a better watch?
Honestly, not for most people's actual needs. A watch rated to 4,000 meters is a genuine engineering achievement, and I get why it's tempting to chase the bigger number, but almost nobody will ever dive anywhere close to that depth. The rating matters far more for what it signals about the case construction and gasket engineering than for any depth you'll actually reach. Buy the rating that actually matches how you'll use the watch day to day.
What actually affects water resistance over time?
Gaskets age and compress over years of wear, which is why water resistance isn't a permanent, one-time guarantee even on a watch rated for serious depth. Pressing the crown or operating pushers underwater on a watch not specifically rated for that use can also compromise the seal instantly, regardless of the watch's stated depth rating. And a watch that's been opened for service needs its water resistance re-tested afterward, since the case seal gets disturbed during that process.
